The Bikini Cocktail
Yields 10 guests
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Citrus Syrup: Put all the items into a pot, heat until it reaches a simmer, agitating so the sugar melts. After that, turn off the burner allowing it to cool down fully. Decant into a sealable bottle, seal and refrigerate it in the fridge, where it will keep for about one month.
For the Premix: Mix the specified liquids in a big jug, allow it to infuse for an hour, then filter it best through cheesecloth, making it completely strained.
To serve: Pour 85ml of your batch mix into a stirring glass packed with ice, and stir carefully for a minute until cold. Pour into a frosted cocktail glass or a similar vessel, decorate with some cranberries adding the final touch with a brief mist with the mandarin essence over the drink.
